I saw your post on 1o1cookbooks about the Nibby Buckwheat Butter cookies. I use xylitol and have found you can basically use a 1:1 ratio substitution for sugar to xylitol. I don't know much about Stevia, though. Sometimes, depending on the recipe, I need to add a little extra xylitol, so it can be a "learn on the job" or trial and error procedure. You could also try using straight buckwheat here, or instead of the wheat, use rice flour or millet flour. Gluten free baking can be a fun challenge, and it takes a little time to figure it out--I've made several things that didn't turn out the way I wanted them to, but hardly ever was it not edible (even it if didn't look so great). Just gotta keep trying!
